OM cooking Spinach Paneer
1 lb. Baby spinach, or mature spinach, stems removed
1 t Umeboshi plum paste
1 T Raw honey
Black pepper, freshly ground
1 pk. Halloumi cheese
2 t Sesame oil
Wash spinach thoroughly. Prepare a stove stop steamer
for the spinach. If you do not have a steamer, use a large
pot with a small amount of water, and suspend a
colander above the water, covering the top with a lid.
Steam spinach in small batches, for 1-2 minutes each. Do
not overcook the spinach, allow to become just tender.
Place each batch in a small bowl once finished. Place spinach, umeboshi, honey, and
black pepper to your taste in the work bowl of a food processor. Pulse the processor
just to chop the spinach. Be careful not to puree into a soup. Heat a skillet over
medium with the sesame oil. Add the halloumi cheese, be careful as it may spatter.
Allow to brown on one side for 1 minute, turn cheese to brown on another side for 1
more minute. Add chopped spinach and turn off heat. Toss together in a bowl and
serve immediately. It’s important to know that the Halloumi cheese is a very important
ingredient, and other cheeses cannot be substituted. It has a property of not melting
when heated that other cheeses do not have. It is amazing to see the first time.

a very versatile food, as it can be a main dish as in this recipe, or as a filler for
stuffings, or pureed and dehydrated into a wrap!! Hooray for spinach! It's definitely
delicious!
