OM cooking Spinach Paneer

1 lb. Baby spinach, or mature spinach, stems removed 

1 t Umeboshi plum paste 

1 T Raw honey 

 Black pepper, freshly ground 


 

1 pk. Halloumi cheese 

2 t Sesame oil 

 

Wash spinach thoroughly. Prepare a stove stop steamer 

for the spinach.  If you do not have a steamer, use a large 

pot with a small amount of water, and suspend a 

colander above the water, covering the top with a lid. 

Steam spinach in small batches, for 1-2 minutes each. Do 

not overcook the spinach, allow to become just tender. 

Place each batch in a small bowl once finished. Place spinach, umeboshi, honey, and 

black pepper to your taste in the work bowl of a food processor. Pulse the processor 

just to chop the spinach. Be careful not to puree into a soup. Heat a skillet over 

medium with the sesame oil. Add the halloumi cheese, be careful as it may spatter. 

Allow to brown on one side for 1 minute, turn cheese to brown on another side for 1 

more minute. Add chopped spinach and turn off heat. Toss together in a bowl and 

serve immediately. It’s important to know that the Halloumi cheese is a very important 

ingredient, and other cheeses cannot be substituted. It has a property of not melting 

when heated that other cheeses do not have. It is amazing to see the first time.

We all know that Popeye made himself super strong by eating spinach, but you may 

be surprised to learn that he may also have been protecting himself against 

osteoporosis, heart disease, colon cancer, arthritis, and other diseases at the same 

time. Calorie for calorie, leafy green vegetables like spinach with its delicate texture 

and jade green color provide more nutrients than any other food. Researchers have 

identified at least 13 different flavonoid compounds in spinach that function as 

antioxidants and as anti-cancer agents. The nutrients in spinach can also help with 

conditions in which inflammation plays a role. For atherosclerosis and diabetic heart 

disease, few foods compare to spinach in their number of helpful nutrients. Spinach is 

a very versatile food, as it can be a main dish as in this recipe, or as a filler for 

stuffings, or pureed and dehydrated into a wrap!! Hooray for spinach! It's definitely 

delicious!
